The aquaculture quality control challenge

Global salmon demand has grown significantly in recent years, with most production from farmed sources. Evaluating nutritional quality—color, taste, and omega-3 content—traditionally requires destructive laboratory analysis, making it impossible to monitor quality on living stock or adjust feeding strategies based on real-time data. Key technical challenges include:

  • Destructive testing: Standard methods require sacrificing fish to prepare samples compatible with benchtop equipment
  • Limited real-time monitoring: Laboraty analysis prevents continuous quality assessment during farming
  • Feed optimization constraints: Inability to measure nutritional parameters on living fish limits feed adjustment strategies

Application example: Non-destructive nutritional profiling in salmon farming

Salmon quality is determined by specific biochemical markers: carotenoids (providing characteristic pink color), lipid content and fatty acid profiles (including saturated and unsaturated fats), and moisture levels (affecting nutritional value). These parameters vary by salmon type and origin, supporting provenance verification and pricing.
